This is what happens when you have a CSA ("Community Supported Agriculture") share...and don't keep up! You end up with six squashes (Squashes? Squashii? Ridiculous.) on your kitchen table....staring at you...
But...never fear....I have a plan!
I'm going to make some of Andie's Autumn Butternut Squash Salad, and take it to my friend Steph's later today.

Also up...my own spaghetti squash lasagna! I'll post the recipe when I've been able to confirm it...I don't want to post something without being sure of the ingredient proportions. :-)
And...the leftover cute acorn squash? Dinner tomorrow! Probably with some chicken and a salad.
Rest Day
Ugh. I don't love rest days. Especially now that I'm back in the groove of working out 5 or so days a week. I tend to do SO much better with food intake on days that I work out. For some reason, strenuous workouts tend to depress my appetite. And even moderate workouts are a good reminder that food is fuel...NOT a recreational activity.
But...yesterday was a BIG workout day. Spin class + Personal training session = Yowza.
After spin/yoga on Wednesday, personal training on Thursday, spin on Friday, and yesterday's double duty workout plus a day of shopping...my legs are screaming for a break.
Last year at this time...I would have gone to the gym....and suffered through a workout. It wouldn't have been fun, and would have left me even more depleted. But, despite struggles this year, I've learned some things. Rest is important. It's a part of taking care of your body...which is, after all, the goal here.
So...I got a lot of sleep last night (11:30p-8:30a...yay)! And, for today, lots of water and some foam rolling. If I have time, I may take an easy bike ride later on for some active recovery. And...I will keep a handle on food intake tonight. I'm bringing a healthy option, and my friend Steph is awesomely supportive of my efforts to eat healthfully...she's making steamed shrimp!

Ok, so the butternut squash salad turned into more of a butternut squash puree. I committed one of the cardinal sins of cooking...I crowded the pan. So, the veggies overcooked before they got brown. Sooo...I pureed them in the food processor with a couple of tablespoons of milk. Perfect!
ReplyDeleteI also have a squash problem. We roasted the squash, along with apples, onions, and garlic, and pureed everything with chicken broth and some S&P. Yummy, vegan, and healthy!
ReplyDeleteSo tasty! I had some chicken broth at the ready, but ended up just eating it as a puree. So tasty, and SO healthy!
